Propylene glycol alginate (PGA or E405) is a versatile, food-grade additive derived from natural brown seaweed (kelp). It functions primarily as an emulsifier, stabilizer, and thickener, especially effective in acidic environments where other alginates are not stable. Key Properties and Function
  • Origin: Made by processing alginic acid extracted from brown algae, which is then reacted with propylene oxide.
  • Appearance: A white to yellowish, fibrous or granular powder that is nearly odorless and tasteless.
  • Solubility: Soluble in both cold and hot water, forming a viscous, colloidal solution.
  • Acid/pH Stability: Unlike some other gums, PGA is stable in acidic conditions (pH 3-5), making it a valuable additive for products with low pH, such as fruit juice drinks and acidic dairy products.
